PICI AL FUMO  Hand-rolled Tuscan pasta. Please have a work space cleared and ready to roll out the pasta either on a counter or table top.  

 

INGREDIENTS NEEDED:

1 cup chopped pancetta or bacon

Sprig of fresh rosemary

1 small yellow onion

1 cup whole, peeled tomatoes

1 cup heavy cream

1/4 cup extra virgin olive oil

Kosher salt

 

PASTA DOUGH:

1 1/2 cup all purpose flour

1 1/2 cup semolina

1 1/2 cup water

2 Tablespoons extra virgin olive oil

 

 

TOOLS:

Non-stick pan

Pot to boil at least 1 lb.

1 cup coffee

Cinnamon

Dark rum, Marsala wine
